
Ingredients:
- 45 grams cheese, grated
- 1 eggs
- 1/2 cup mayonnaise
- 1/8 cup milk
- 1/2 teaspoon French mustard
- 1/8 cup Parmesan cheese
- 1/2 tablespoon parsley, chopped
- 1/2 kg potatoes, large
- salt, pepper
- 1/4 cup sour cream
Instructions:
- Peel and chop potatoes and cook in boiling salted water until tender. Drain, and mash until smooth.
- Mix with mayonnaise, sour cream, milk, eggs, parsley and mustard.
- Press mixture evenly into a greased ovenproof dish, sprinkle with the combined grated cheeses and bake uncovered at 200 C for 20-30 minutes until golden on top.
