- 2 cups fresh corn kernels (or frozen, thawed)
- 1 jalapeno, seeded and finely chopped
- 1/3 cup chopped red onion
- 1/3 cup chopped fresh cilantro
- 2 tablespoons freshly squeezed lime juice
- Salt and pepper, to taste
- In a medium bowl, stir together corn, jalapeno, red onion, cilantro and lime juice. Season with salt and pepper, to taste. Refrigerate until serving.
