Splendid Texas Caviar


  • 15 ounces black eyed peas, drained and rinsed
  • 1/2 cup chopped cilantro
  • 1/2 teaspoon minced garlic
  • 3 drops hot sauce
  • 1 The juice of lime
  • 1 ripe roma tomato, chopped
  • 3 tablespoons of good quality salsa verde


  1. Mix together all of the ingredients together and allow them to sit in the refrigerator for 5 hours or overnight (if you can).
  2. It's best if you take the beans out of the refrigerator about an hour before serving to bring them to room temperature.
